Ingredients

Scale

For the Pot Pie Filling:

  • 2 ½ cups cooked chicken, shredded or diced
  • 1 ¾ cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 can (10.5 oz) condensed cream of chicken soup
  • ½ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Crust:

  • 1 box Pillsbury refrigerated pie crusts (2 crusts)
  • 1 egg, beaten (optional, for egg wash)

Instructions

Step 1: Prepare the Oven & Crust

  1. Preheat your oven to 425°F (218°C).
  2. Roll out one Pillsbury pie crust and press it into a 9-inch pie dish, trimming any excess dough.

Step 2: Make the Filling

  1. In a large mixing bowl, combine the shredded chicken, frozen vegetables, cream of chicken soup, milk, salt, and pepper. Stir until well blended.

Step 3: Assemble the Pot Pie

  1. Pour the chicken mixture into the prepared pie crust, spreading it evenly.
  2. Place the second pie crust over the filling. Press and crimp the edges with a fork to seal.
  3. Cut small slits in the top crust to allow steam to escape.
  4. For a golden, shiny crust, brush the top with a beaten egg (optional).

Step 4: Bake & Serve

  1. Place the pie in the preheated oven and bake for 30-35 minutes or until the crust is golden brown.
  2. Let the pot pie cool for 5-10 minutes before slicing to allow the filling to set.
  3. Serve warm and enjoy your homemade Pillsbury Chicken Pot Pie!
