Reuben Crescent Bake

A cheesy, comforting twist on the classic Reuben sandwich, made easy with crescent roll dough! Perfect for a quick weeknight dinner.

Ingredients

  • 1 (8-ounce) can refrigerated crescent roll dough
  • 1 (12-ounce) package thinly sliced corned beef
  • 1 (16-ounce) can sauerkraut, drained
  • 1 (8-ounce) package Swiss cheese slices
  • 1/2 cup Thousand Island dressing
  • 1 tablespoon caraway seeds (optional)

Instructions

  • 1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  • 2. Unroll crescent roll dough and arrange triangles in the dish, pressing seams to form a crust.
  • 3. Mix Thousand Island dressing and caraway seeds (if using).
  • 4. Spread half of the dressing mixture over the crust. Layer half of the corned beef, sauerkraut, and Swiss cheese.
  • 5. Repeat layering with remaining ingredients.
  • 6. Cover tightly with foil and bake for 20 minutes.
  • 7. Remove foil and bake for 10-15 minutes, or until golden brown and bubbly.
  • 8. Let cool slightly before slicing and serving.

Notes

  • For gluten-free, use gluten-free crescent roll dough. For dairy-free, use dairy-free cheese and dressing. For lower sodium, use low-sodium corned beef and rinse sauerkraut. Try variations with turkey, pastrami, or added vegetables. Can be assembled ahead and refrigerated or frozen.
