For the Cheese Sauce:

  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tsp dry mustard powder
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • ¼ tsp nutmeg (optional)
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Pinconning cheese, shredded (or substitute with Gouda/Colby Jack)
  • ½ cup Parmesan cheese, grated

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of water to a boil and add 1 tablespoon of salt.
  2. Add the penne rigate and cook until al dente (about 1–2 minutes less than package instructions).
  3. Drain, toss with 1 tablespoon of butter, and set aside.

Step 2: Prepare the Cheese Sauce

  2. Whisk in the flour and cook for 1–2 minutes, stirring constantly to form a roux.
  3. Gradually whisk in milk and heavy cream, stirring constantly to prevent lumps.

Step 3: Combine Pasta & Sauce
