Ingredients

  • 4 high-quality vanilla beans (Grade A recommended)

  • 1 cup granulated sugar (or superfine sugar for smoother texture)

  • 1/2 cup vodka (or clear alcohol like rum or bourbon)

Instructions

  • Split each vanilla bean lengthwise using a sharp knife.

  • Scrape out the seeds using the blunt side of the knife.

  • Add the scraped seeds, empty pods, sugar, and vodka into a high-powered blender or food processor.

  • Blend until a smooth, thick paste forms. Scrape down the sides as needed.

  • Transfer the mixture to an airtight glass jar.

  • Let the paste rest at room temperature for at least 2 weeks, preferably 4–6 weeks, to allow the flavors to develop.

  • Shake the jar every few days during the resting period.

 

    • Optional: Remove pods for a smoother consistency before using, or leave them in for stronger flavor over time.

Notes

    • Use superfine sugar for a smoother blend if desired.

    • Rum or bourbon may be substituted for vodka but will change the flavor slightly.

    • Add variations like a pinch of cinnamon, cardamom, citrus zest, or espresso powder for custom flavor twists.

    • Store in a cool, dark place in a sealed container. Keeps for up to 1 year.

    • If the paste thickens over time, stir in a teaspoon or two of vodka until desired consistency is reached.

    • This recipe is naturally vegetarian and alcohol-based.
