Instructions

Split each vanilla bean lengthwise using a sharp knife.

Scrape out the seeds using the blunt side of the knife.

Add the scraped seeds, empty pods, sugar, and vodka into a high-powered blender or food processor.

Blend until a smooth, thick paste forms. Scrape down the sides as needed.

Transfer the mixture to an airtight glass jar.

Let the paste rest at room temperature for at least 2 weeks, preferably 4–6 weeks, to allow the flavors to develop.

Shake the jar every few days during the resting period.
